Ingredient Breakdown
All-purpose flour – this gives the sugar cookie structure.
Baking powder – a little bit of baking powder helps the sugar cookie rise slightly. Do not use baking soda!
Butter – provides flavor and structure. I always recommend using unsalted butter but salted butter works if that’s all you have on hand, just be sure to omit the 1/4 teaspoon of salt. Do not use cold or melted butter.
Granulated sugar – sweetens and softens the cookie. Do not substitute it with brown sugar.
Egg – helps bind the ingredients.
Vanilla extract and salt – enhances flavor. Always use pure vanilla extract instead of imitation for best flavor.
Blueberries and strawberries – fresh berries are arranged on top of the sugar cookie to make it look like the American flag! You can also substitute the strawberries with raspberries.
How To Make American Flag Fruit Pizza
1. Make the Sugar Cookie Dough: In a small bowl whisk the all-purpose flour, baking powder and salt. Set aside.
2. Use a hand mixer or a stand mixer fitted with the paddle attachment to cream softened butter and granulated sugar until light and fluffy.
3. Add the egg and vanilla extract then mix until just combined. Scrape the sides of the bowl.
4. Add the dry ingredients all at once and mix on low speed until just combined. Do not over mix the dough because it will make the cookie bars tough.
5. Press the sugar cookie dough into the prepared 9×13 inch pan using clean hands or the back of a measuring cup to smooth it out.
6. Bake the sugar cookie at 350°F for 16-18 minutes. The edges will be slightly browned and the center will still be pale. Let cool completely on a wire rack.

7. Make the Cream Cheese Frosting: using a stand mixer fitted with the paddle attachment or a hand mixer cream the butter and cream cheese. Mix in the confectioners’ sugar and vanilla extract until smooth. Add salt to taste.
8. Assembly: Place the sugar cookie onto a serving dish or rectangular cake board (you can also leave it in the pan). Spread a thin layer of cream cheese frosting on top of the cookie. Be sure to reserve some of the frosting for later to create the white stripes.
9. Use the blueberries to create a rectangle on the top left side of the cookie.

10. Place strawberry slices in horizontal lines across the cookie.
11. Use a piping bag or a zip-top bag to pipe the remaining cream cheese frosting in the gaps between the strawberries. Place in the fridge until serving. Store American Flag Fruit Pizza for up to 5 days in the fridge.

Pro Tips For American Flag Fruit Pizza
- Weigh your ingredients using a kitchen scale! Measuring ingredients by volume is not accurate.
- Make sure your parchment paper hangs over the sides of the pan for easy removal after baking!
- Wait until the sugar cookie is COMPLETELY COOLED before frosting otherwise the cream cheese frosting will melt.
- Make sure to completely dry your blueberries and strawberries after washing.
Frequently Asked Questions
Can You Freeze Fruit Pizza?
No, I don’t recommend freezing this American Flag Fruit Pizza because the fresh fruit won’t hold up well after thawing.
Can You Make Sugar Cookie Dough In Advance?
Yes! Once you press the the sugar cookie dough into the 9×13 inch pan you can either refrigerate it for up to 3 days or freeze it for up to 3 months wrapped tightly in plastic wrap.
What’s the difference between sugar cookies And Shortbread?
Unlike sugar cookies, shortbread is made without eggs or any leavening agents. Shortbread also has a more crumbly texture as a result of the dough’s high fat content. If you’re looking for shortbread recipes try my Blueberry Shortbread Bars, Lime Shortbread Cookies or Shortbread Linzer Cookies!
