These Small Batch Rice Krispie Treats are the perfect recipe to make when you’re craving something sweet or if you need a simple dessert for just a few people. These marshmallow filled treats are ultra gooey, so buttery and taste 100 times better than anything you can find at the store. Plus they’re super easy to make and come together in just 15 minutes!

Ingredient Breakdown
Mini marshmallows – I recommend using mini marshmallows because they’re easier to melt. Don’t use stale marshmallows because they will make your Rice Krispie Treats stale.
Butter – I always recommend using unsalted butter but salted butter works if that’s all you have on hand, just be sure to omit the 1/8 teaspoon of salt.
Salt and vanilla extract – enhances flavor. Always use pure vanilla extract instead of imitation for best flavor.
Rice Krispies cereal – you can use any brand of crisp rice cereal. Don’t use stale cereal because it will make your Rice Krispie Treats stale.

Ingredient Substitutions/Additions
The possibilities are truly endless when it comes to making these Rice Krispie Treats. Some delicious substitutions/additions to this recipe are:
- Nuts – peanuts, almonds, cashews, etc. would add some extra crunch/saltiness.
- Sprinkles – add a pop of color to your treats or match them to the holiday you’re celebrating.
- Other kinds of cereal – swap out the crisp rice cereal for Fruit Pebbles, Lucky Charms, Cocoa Krispies, etc.!
- Chocolate – add chocolate chips, M&Ms or your favorite chocolate candy bar.
- Extracts – swap out the vanilla extract for almond extract, peppermint extract or any other extract you desire!
How To Make Small Batch Rice Krispie Treats
1. Set aside 1oz (1/2 cup) of mini marshmallows. In a medium pot, melt the remaining mini marshmallows and cubed butter on medium low heat while stirring constantly. Remove from heat once the marshmallows are just melted.
2. Stir in the salt and vanilla extract. Then mix in the Rice Krispie cereal and remaining half cup of mini marshmallows.
3. Gently press into the prepared 9×5 inch pan. Let cool to room temperature for 30-60 minutes before slicing. Store Small Batch Rice Krispie Treats in an airtight container for up to 4 days at room temperature.

Pro Tips For Small Batch Rice Krispie Treats
- Weigh your ingredients using a kitchen scale! Measuring ingredients by volume is not accurate; baking is a science after all!
- Make sure your parchment paper hangs over the sides of the pan for easy removal after cooling!
- Use fresh ingredients! Stale marshmallows or cereal will result in stale Rice Krispie Treats.
- Don’t over cook the marshmallows otherwise your Rice Krispie Treats will become very hard after cooling! Be sure to remove them from the heat once they’re just melted.
- Don’t press the Rice Krispie Treats too firmly into the pan otherwise they will turn out very dense and hard.
Can Rice Krispie Treats Be Made Gluten Free?
Yes! To make gluten free Rice Krispie Treats, use certified gluten free crisp rice cereal.

Do Rice Krispie Treats Need To Be Refrigerated?
I don’t recommend refrigerating these treats because it will make them hard. Simply store them in an airtight container for up to 4 days at room temperature.
Can Rice Krispie Treats Be Frozen?
Yes, Rice Krispie Treats can be frozen in a freezer-safe container or bag for up to 2 months. Thaw at room temperature before serving.

- 28 g (2 tbsp) unsalted butter, cubed
- ⅛ tsp salt
- ⅛ tsp vanilla extract
