Ingredient Breakdown

Graham crackers – softens as the icebox cake chills which gives them a cakey texture.

Granulated sugar & egg whites – cooked over a water bath until the sugar is dissolved and then whipped until fluffy to create a swiss meringue aka the homemade marshmallow fluff!

Chocolate chips & heavy cream – used to make the chocolate ganache. You can use whatever chocolate chips you prefer but I usually use semi-sweet chocolate chips.

How To Make S’mores Ice Box Cake

1. Make the Chocolate Ganache: place chocolate in a heat proof bowl. Heat the heavy cream in the microwave or in a small pot over medium heat until it just begins to simmer. Pour the heavy cream over the chocolate then let sit for 2 minutes. Slowly whisk together until combined then place in the fridge while you prepare the marshmallow fluff. You want to chocolate ganache to cool down and become less fluid but not completely set.

2. Make the Homemade Marshmallow Fluff: in a medium pot bring about 1-2 inches of water to a simmer.

3. In a mixing bowl combine the granulated sugar and egg whites. Place the bowl over the pot of simmering water (the bottom of the bowl should not touch the water) and whisk occasionally.

4. Once all of the sugar is dissolved or the mixture reaches 140°F, place the mixing bowl on a stand mixer fitted with the whisk attachment (you can check if the sugar is dissolved by rubbing a little bit of the mixture between two clean fingers). Whip on high speed until fluffy and cooled to room temperature.

5. Assemble the Ice Box Cake: spread a very thin layer of marshmallow fluff on the bottom of an 8×8 inch pan then place a layer of graham crackers on top.

6. Evenly spread 1/3 of the chocolate ganache on top of the graham crackers. If the ganache cooled down too much then reheat slightly until it’s spreadable.

7. Evenly spread 1/3 of the marshmallow fluff on top of the chocolate ganache.

8. Repeat two more times ending with a layer of marshmallow fluff. If desired, top with graham cracker crumbs and chocolate curls or mini chocolate chips.

9. Cover and chill in the fridge for at least 6 hours or overnight before serving. Store S’mores Ice Box Cake covered for up to 4 days in the fridge.

Pro Tips For S’mores Ice Box Cake

  • Weigh your ingredients using a kitchen scale! Measuring ingredients by volume is not accurate; baking is a science after all!
  • The presence of even the tiniest bit of yolk or fat will prevent your egg whites from whipping up for the marshmallow fluff so be careful not to get any yolks into your whites. You can also clean your mixing bowl and whisk attachment with a little bit of vinegar if there’s any grease on them.
  • Instead of garnishing the top with graham cracker crumbs and chocolate, you can use a blow torch to lightly toast the top layer of marshmallow fluff!
