These easy Strawberry Oatmeal Bars feature a buttery oat filled crust topped with homemade strawberry filling and a crisp oatmeal topping!

These Strawberry Oatmeal Bars are such a super easy and refreshing treat. The oatmeal crust and topping are made from the same dough and the homemade strawberry filling comes together in just one pot! They’re buttery, crisp and perfect for spring and summer.

Ingredient Breakdown

Oatmeal Crust/topping:

All-purpose flour – provides structure.

Rolled oats – (also called old fashioned oats) provides structure and oat flavor. Do not substitute with instant oats, quick oats or steel cut oats because it will change the texture of the crust/topping.

Butter – provides flavor and binds ingredients. I always recommend using unsalted butter but salted butter works if that’s all you have on hand, just be sure to omit the 1/4 teaspoon of salt.

Brown sugar and granulated sugar – both sugars are necessary for sweetness and texture. I prefer using dark brown sugar for extra molasses flavor but light brown sugar also works fine!

Cinnamon and salt – enhances flavor.

Strawberry filling:

Strawberries – fresh or frozen strawberries will work.

Granulated sugar – provides sweetness.

Lemon juice and salt – enhances flavor. Always use fresh lemon juice!

Cornstarch and water – mixed together to create a slurry which thickens the filling.

How To Make Strawberry Oatmeal Bars

1. Make the Oatmeal Crust/Topping: in a medium bowl combine the all-purpose flour, rolled oats, brown sugar, granulated sugar, cinnamon and salt. Add the melted butter and mix until well combined.

2. Reserve 1/3 of the oat mixture for the topping (about 1 cup) then press the remaining mixture into a parchment lined 8×8 inch pan using clean hands or the back of a measuring cup to smooth it out.

3. Bake the crust at 350°F for 15 minutes or until lightly browned.

4. Make the Strawberry Filling: place the strawberries, granulated sugar, lemon juice and salt in a small pot. Cook on medium heat stirring occasionally until bubbling.

5. Combine the cornstarch and water in a small bowl to create a slurry. Stir the slurry into the strawberry mixture then cook for 1-2 more minutes or until thickened. Remove from heat.

6. Spread the strawberry filling evenly over the prebaked oatmeal crust then sprinkle the reserved oatmeal mixture on top.

7. Bake at 350°F for 25 minutes or until slightly browned. Cool to room temperature or chill before slicing for cleanest cuts. Store Strawberry Oatmeal Bars in an airtight container for up to 5 days in the fridge.

Pro Tips For Strawberry Oatmeal Bars

  • Weigh your ingredients using a kitchen scale! Measuring ingredients by volume is not accurate.
  • Make sure your parchment paper hangs over the sides of the pan for easy removal after baking!
  • Use fresh lemon juice in the strawberry filling, not lemon juice from a bottle!
  • Allow oatmeal bars to cool completely before slicing otherwise they may fall apart!

  • 50 g (1/4 cup) brown sugar

  • 113 g (1/2 cup) unsalted butter, melted

Strawberry Filling

  • 8 oz strawberries, quartered
  • 50 g (1/4 cup) granulated sugar
  • 15 g (1 tbsp) lemon juice
  • tsp salt
  • 1 tbsp cornstarch
  • 1 tbsp water

Instructions
