Cream the softened butter, granulated sugar and vanilla extract until light and fluffy. Add the dry ingredients all at once and mix until just combined then add the sprinkles.
Divide dough in half then shape into flat discs and refrigerate for at least 2 hours. Cut out cookies then bake. If desired decorate cooled cookies with chocolate icing and enjoy!
