These ghostly Boo-berry Hand Pies are made with a homemade blueberry filling, flaky buttermilk pie crust and a simple vanilla icing!

PIE CRUST INGREDIENTS

- All-purpose flour - Granulated sugar - Salt - Butter - Buttermilk

BLUEBERRY FILLING INGREDIENTS

- Blueberries - Granulated sugar - Lemon juice - Salt - Cornstarch - Water

STEP 1

In a mixing bowl combine all-purpose flour, sugar and salt. Place bowl on a stand mixer fitted with the paddle attachment.

STEP 2

Add the cold cubed butter to the mixing bowl then mix on low until the butter is pea sized.

STEP 3

Add half of the buttermilk to the mixture and begin to mix on low speed then gradually add the rest of the buttermilk. Stop mixing when the dough is rough and shaggy.

STEP 4

Transfer dough to a lightly floured surface then divide in half and shape into 2 discs. Wrap each in plastic wrap and refrigerate for at least one hour or up to 3 days.

STEP 5

Place the blueberries, granulated sugar, lemon juice and salt in a small pot. Cook on medium heat stirring occasionally until bubbling.

STEP 6

Combine the cornstarch and water in a small bowl to create a slurry. Stir the slurry into the blueberry mixture then cook for 1-2 more minutes or until thickened

STEP 7

Roll out pie dough to 1/4 inch thick then cut out ghosts. Place onto a baking sheet then scoop 1/2 tbsp of blueberry filling in the center of each one.

STEP 8

Brush the edges of dough with egg wash then place another ghost on top. Crimp edges with a fork to seal. Bake until golden brown and enjoy!
